Christmas Clementine Marmalade

Little oranges are so ubiquitous at Christmas that I assumed the variety on offer to be universal. Being a child of the West, that meant mandarin oranges to me. Imagine my delight when I discovered a new taste in my first Montreal winter! Here we get clementines, which look almost identical but are noticeably tangier, which luckily works perfectly for jam making. This is a hand-cut, whole-fruit marmalade, assertively flavoured with Christmas spices to get you into the holiday spirit.
